Here is a super simple zoodle dinner that's low calorie, low carb, gluten-free and takes just 10 minutes to make. This has become one of my biggest go-to for my week night dinner.
Tool:
-Spiralizer
Ingredients:
-1/4 cup Sriracha hot sauce
-2Tbsp coconut oil or Coconut oil spray
-4 oz pre-cooked Chicken breast
-1 medium-big sized zucchini
-1 clove of garlic
-1tsp salt & pepper
-4Tbsp Stevia or 1 Tbsp honey
Instructions:
1. Spiralize Zucchini into thin noodles and set aside.
2. Heat oil in a frying pan over medium heat. Add zucchini noodles, shredded chicken breast, sriracha hot sauce, garlic, stevia salt and pepper. Cook and stir until chicken is lightly browned (since we have already cooked the chicken prior.)
3. Stir zucchini noodles gently, the whole process should take about 4-5 minutes so that the zucchini noodles don't become soggy or overcooked (mushy). Just like pasta, Al Dante!
