KFC: Keto Fried Chicken

Redefining KFC aka. K(eto) F(ried) C(hicken)

Who knew KFC can actually be good for us? For as long as I can remember, I've always loved fried chicken. Any chicken dish for that matter. Like with anything that tastes good but are bad for us, the OG KFC comes with surplus amount of calories so here is a recipe that will give keep your waistline small while keeping your tastebuds BIG. 

Ingredients: 
4 boneless skinless chicken thighs or however many you’d like 
2 cups pickle juice
oil for frying

Wash:
1 large egg
1/2 cup cashew milk

Breading:
2/3 cup blanched almond flour
2/3 cup finely grated parmesan cheese
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/2 teaspoon cayenne


Instructions:
1. Soak chicken in pickle juice for at least 4-6hours for extra flavour. 

2. Add 1 to 2 inches of oil to a pot over medium-high heat. Heat the oil to 350 F, and frequently monitor to maintain the temperature by adjusting the flame during frying.
3. In a bowl, add egg and milk, beating until well-mixed. In another bowl, stir together all “breading” ingredients until well-mixed. Set aside.
4. Cut each chicken thigh into 3 evenly sized pieces. If moist, pat them dry with paper towels.

5. Coat each piece first in the breading, then in the egg wash, and then in the breading again, coating all sides. Shake off excess and carefully lower into the hot oil. Fry until deep brown and cooked through, about 5 minutes, and drain on paper towels. You can bake instead of frying as well. It won’t be AS crispy but it will be just as good.
